Why Are Cold Boiled Eggs Hard To Peel?
The hard-to-peel nature of cold boiled eggs is due to the fact that when the eggs are boiled, the inner shell membrane sticks to the egg white. This can cause the egg white to come off with the shell when you try to peel it. As the eggs cool, the membrane contracts, making it even harder to peel the shell off cleanly. Therefore, it is recommended to peel boiled eggs while they are still warm.
