What Temperature Should Oil Be Heated To?
The temperature to which oil should be heated to depends on the type of oil and what is being cooked. Generally, vegetable and canola oils are heated to around 375°F (190°C) for frying, while olive oil is heated to around 350°F (175°C) for sautéing or pan-frying. It is important to never overheat the oil as it can cause it to smoke and create harmful compounds.
