How Do You Preserve Fresh Artichokes?
To preserve fresh artichokes, first wash and trim off the stem and tough outer leaves. Cut off the top inch of the artichoke and rub the cut end with lemon to prevent browning. Place the artichokes in a bowl of acidulated water (water with lemon juice added) to keep them fresh. Store the bowl in the refrigerator until ready to cook. Alternatively, you can blanch the artichokes in boiling water for a few minutes before storing them in the refrigerator.
