What Makes A Risotto Creamy?
The creaminess of risotto comes from the starch present in the Arborio rice used to make it. When the rice is cooked slowly in liquid (usually broth), the starch granules on the surface of the rice grains break down and create a creamy texture, while the interior of the grains stay al dente. Additionally, butter and grated Parmesan cheese can also be added at the end to enhance the creaminess.
