How Do You Prepare Beets For Canning?
To prepare beets for canning, first wash them thoroughly. Trim the greens and the root end, leaving about an inch of stem intact. Boil or steam the beets until they are just tender, then plunge them into cold water for a few minutes to cool. Once cooled, remove the skins and slice or dice the beets as desired. Pack the beets into sterilized jars, leaving at least 1 inch of headspace. Cover the beets with boiling water or brine, leaving the same amount of headspace. Secure the lids and process in a pressure canner according to the recipe instructions.
