To make a Scoby from scratch, brew a strong batch of sweet tea using black tea and white sugar, and let it cool to room temperature. Add a distilled vinegar or a pre-made Scoby to the tea mixture, and cover it with a clean cloth. Place it in a warm, dark place and let it sit undisturbed for two to three weeks. Afterward, a thin layer will form at the top of the tea mixture, which is the Scoby. It can be used to start a new batch of fermented tea called Kombucha.
