What Makes Magic Shell Harden?
Magic Shell hardens when it comes in contact with cold surfaces due to the presence of coconut oil and a liquid sweetener like corn syrup. When the ice cream is cold, the coconut oil solidifies and forms a hard shell around the ice cream, which cracks when you bite into it.
