How Do You Know When Lamb Is Cooked?
The internal temperature is the most accurate way to determine when lamb is cooked. Medium-rare lamb is cooked to an internal temperature of 145°F, while medium lamb should be cooked to 160°F. The juices coming from the meat should run clear, not pink or red. Also, the meat should be slightly firm yet still tender when touched with a finger.
