Passing the Mash refers to the process of converting solid grains into fermentable sugars during the initial stage of the brewing process. This involves combining the milled grains with hot water to activate enzymes that break down the complex sugars into simpler forms. Once the mash is complete, the liquid is drained or “sparged” from the solids to be used in the fermentation process.
