Pork shoulder and pork butt are not the same but they come from the same general area of the pig’s body. Pork butt is actually a cut from the upper shoulder of the pig and is sometimes called a Boston butt, while pork shoulder is the entire shoulder section of the pig. Both cuts are tough and fatty, making them perfect for dishes that require long, slow cooking to break down the meat and render the fat.
