Is Carbon Steel Really Nonstick?
Carbon steel cookware is not naturally nonstick, but it can develop nonstick qualities with proper seasoning. Seasoning refers to the process of forming a protective layer of polymerized oil on the cookware’s surface, which prevents food from sticking. Carbon steel pans are also responsive and conductive, making them an excellent choice for high-heat cooking, including searing and stir-frying. However, compared to traditional nonstick cookware, carbon steel requires more maintenance and care to maintain its nonstick properties.
