Why Does My Pumpkin Pie Rise?
Pumpkin pie rises during baking due to the leavening agents and/or the steam created from cooking. Eggs, baking powder, and baking soda are common leavening agents used in pumpkin pie recipes. As the pumpkin pie heats up, these ingredients produce carbon dioxide gas, which expands and causes the pie to rise. Additionally, as the filling cooks and the water content evaporates, steam is created and can contribute to the rising of the crust.
