To make a good spinach lasagna, start by boiling lasagna noodles until they are cooked al dente. Next, sauté garlic and spinach until the spinach is wilted. In a separate bowl, mix together ricotta cheese, Parmesan cheese, and beaten eggs. Layer the lasagna noodles in a baking dish, followed by a layer of the ricotta cheese mixture and a layer of the spinach. Repeat until all ingredients are used up, making sure to end with a layer of noodles and a layer of shredded mozzarella cheese. Cover with foil and bake in the oven for 25 minutes.
