Why Do They Call It Lemon Curd?
Lemon curd gets its name from its texture: a smooth, creamy texture. It is also called “curd” because, like other fruit curds such as cheese curds, it is prepared by heating the mixture until it thickens into a soft, pudding-like consistency. The lemon flavor comes from using fresh lemon juice and zest in the recipe. The term “curd” does not refer to any dairy product in lemon curd, despite its creamy texture.
