To eat an artichoke in the oven, first preheat the oven to 425°F. Cut off the top of the artichoke and trim the tips of the remaining leaves. Spread the leaves apart and drizzle with olive oil and salt. Roast in the oven for 50-60 minutes until tender. To eat, pull off each leaf and scrape the meat off the bottom with your teeth. Once you get to the center, remove the choke and enjoy the heart.
