Why Are My Pralines Soft?
Pralines can become soft if they are not cooked enough or if they are cooked at too low a temperature. Additionally, humidity can cause pralines to absorb moisture and become soft. Using too much cream or not enough sugar can also result in soft pralines. To ensure that pralines are firm and hold their shape, it is important to follow the recipe carefully and to allow the mixture to reach the correct temperature before dropping it onto a lined baking sheet to cool and harden.
