How Is Traditional Biryani Made?
Traditional biryani is made by layering basmati rice and marinated meat (usually chicken, lamb, or beef) in a deep pot with fragrant spices, like cumin, cinnamon, and cardamom, and sautéed onions. The pot is then covered tightly and cooked slowly on low heat, allowing the meat to cook in its own juices and the flavors to meld together. Saffron, rosewater, and fried raisins and cashews are often added for extra flavor and texture. Once cooked, the biryani is typically served hot with raita, a yogurt-based sauce, and a side of curry or chutney.
