How Do You Halve A Cornish Hen?
To half a Cornish hen, place it breast-side down on a cutting board. Using a sharp chef’s knife, cut along each side of the backbone, starting at the tail end and working your way up to the neck. Remove the backbone and discard (or save for making stock). Flip the hen over and firmly press down on the breastbone to flatten the hen. Use the knife to cut down the center of the breastbone to completely halve the hen. Serve each half as desired.
