Why Is My Lemon Meringue Pie Weeping?
Lemon meringue pie is prone to weeping if the meringue is not properly stabilized or if the pie is not cooled properly. Weeping occurs when moisture is released from the meringue and forms droplets on the surface of the pie. To prevent weeping, make sure that the meringue is stiff and shiny and that it is spread all the way to the edges of the crust to create a seal.
