To roll ravioli by hand, first make a fresh pasta dough and let it rest. Then, roll out the pasta dough to a thin sheet. Place spoonfuls of filling onto the pasta sheet, leaving enough space in between each dollop. Brush some water around each mound of filling, then fold the pasta sheet over the filling to cover it completely. Use a ravioli cutter or a knife to cut the individual raviolis. Finally, pinch the edges of each ravioli to seal it closed.
