Cream of tartar is actually not made, but rather it is a powdery substance that forms naturally during the fermentation of grapes into wine. The crystals that form on the inside of wine barrels are collected, purified, and ground into a fine powder, which we know as cream of tartar. Its chemical name is potassium bitartrate, and it is commonly used as a stabilizer in egg whites, to prevent sugar from crystallizing, and to provide a tangy flavor in baked goods.
