What Pan Is Used For Poaching?
A frying pan or a sauté pan with a lid is generally used for poaching as it has a wide surface area that allows for the food to be completely submerged in the poaching liquid. The pan must also have enough depth to hold enough liquid to cover the food being poached. Other specialized poaching pans, like an egg poaching pan, may have individual compartments for easier handling of delicate foods.
