How Do You Thicken Pork Drippings?
To thicken pork drippings, remove excess fat from the pan drippings and then add a thickener such as cornstarch, flour or roux. Mix the thickener with water or broth and whisk it in to the drippings. Bring the mixture to a boil, stirring frequently until the gravy thickens to the desired consistency. Season with salt and pepper to taste.
