What Is Kombucha Tea Made Of?
Kombucha tea is made of a symbiotic culture of bacteria and yeast called a SCOBY, also known as a “kombucha mother.” The SCOBY is added to sweetened tea and left to ferment for approximately one to two weeks. During the fermentation process, the SCOBY consumes the sugar and caffeine in the tea and produces a variety of organic acids, vitamins, and enzymes. The resulting drink is a slightly fizzy, tangy, and slightly sweet beverage that can be flavored with various fruits, herbs, or spices.
