Why Is Some Honey So Sweet?
Honey is sweet because it is a natural source of sugar. Bees collect nectar from flowers and use enzymes to break down the complex sugars in the nectar into simpler sugars such as fructose and glucose. This process creates a concentrated solution of sugar that is stored in honeycomb cells. When the bees fan their wings over the honeycomb cells, it causes the moisture in the honey to evaporate and thicken, resulting in the sweet, sticky substance we call honey. The sweetness of honey can vary based on factors such as the type of flower the nectar was collected from, the climate and soil conditions, and the processing methods used by beekeepers.
