How Do They Make Chorizo?
Chorizo is made by grinding pork, typically from the shoulder, and adding spices such as paprika, salt, garlic, and vinegar. The mixture is then stuffed into natural or synthetic casings and allowed to ferment and cure for anywhere from a few days to several weeks. The curing process gives chorizo its distinctive tangy and smoky flavor. Different regions and countries have their own variations of chorizo, with unique spice blends and curing methods.
