How Do You Make Good Carbonara?
To make a good carbonara, start by cooking pancetta or bacon in a pan until it’s crispy. Remove from heat and set aside. In a mixing bowl, whisk together egg yolks, grated parmesan cheese, and black pepper. Cook spaghetti in boiling salted water until al dente. Drain the pasta, reserving a cup of the pasta water. Toss the hot pasta with pancetta and the egg mixture until it’s coated. If the mixture is too thick, add some reserved pasta water to thin it out. Serve immediately with additional parmesan cheese.
