To prepare a crown roast, first remove the excess fat and membrane from the bones. Then, season the meat with salt, pepper, and other desired seasonings and herbs. Using kitchen twine, tie the two ends of the roast together to form a circular shape. Place the roast in a roasting pan and roast in the oven at 350°F until the internal temperature reaches 135°F for medium-rare or 145°F for medium. Let the roast rest for 10-15 minutes before removing the twine and slicing into individual chops. Serve with desired sides such as roasted vegetables or mashed potatoes.
