You can easily peel tomatoes without blanching them by using a sharp knife to gently score an “X” on the stem end of the tomato, and then immersing the tomato in a pot of boiling water for just 10 to 15 seconds. Quickly transfer the tomato to a bowl of ice water to cool, then use your fingers or a knife to lift the skin from the tomato, starting at the scored end. The skin should come off easily without the need for blanching.
