How Do You Thicken Cabbage Soup?
To thicken cabbage soup, you can add a roux made from equal parts butter and flour. Melt the butter in a saucepan, add the flour and stir until smooth. Cook the roux for a minute or two, then add it to the soup. Alternatively, you can puree some of the cooked cabbage and vegetables from the soup and add it back in to thicken it. Cornstarch or arrowroot powder can also be used as thickeners by mixing them with a small amount of cold water before adding them to the soup.
