To cook rice pilaf, start by sautéing chopped onions in a bit of butter or oil. Then, add in rice and continue to sauté until the rice is lightly toasted and coated in the fat. Next, add in chicken or vegetable broth and any seasonings or vegetables you desire. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Cook the rice for about 18-20 minutes, or until all the liquid has been absorbed and the rice is tender. Fluff with a fork before serving.
