What Causes A Pie Crust To Not Be Flaky?
A pie crust may not be flaky due to several reasons such as overhandling the dough which results in the formation of too much gluten, insufficient chilling of the dough, adding too much liquid to the dough, using the wrong type of flour, or not using the right amount of fat such as butter or shortening. All these factors can cause the pie crust to become tough, chewy, and less flaky.
