To sharpen Henckel knives, start by holding the knife at a 20-degree angle against a sharpening stone. Moving the blade in a circular motion, draw it down and towards you while applying firm pressure. Repeat this process on the other side of the knife, making sure to maintain the same angle. Finally, use a honing steel to finish the process. Hold the steel vertically with the tip anchored on a stable surface and drag the edge of the knife down the steel in a sweeping motion, honing both sides of the blade for several strokes.
