How Do You Open Raw Oysters?
To open a raw oyster, first make sure it is alive by tapping on the shell – if it doesn’t close, discard it. Next, use a thick glove and an oyster knife to hold the oyster in one hand while inserting the blade at the hinge of the shell. Twist the knife to pop the hinge, then slide it along the top and bottom shells to cut the muscle attaching them. Finally, loosen the oyster from the bottom shell and serve raw with lemon wedges and mignonette sauce.
