How Do You Make Humus?
To make hummus, first, soak 1 cup of dried chickpeas in water overnight. Drain and rinse the chickpeas and then boil them in fresh water for about 1 hour or until tender. Drain the chickpeas again and let them cool. In a food processor, blend the chickpeas, 1/4 cup of tahini, 1/4 cup of freshly squeezed lemon juice, 2 garlic cloves, 1 teaspoon of ground cumin and salt to taste. While blending, slowly add 1/4 cup of water or more until the mixture is smooth and creamy. Garnish with olive oil, paprika and chopped parsley. Serve with pita bread or fresh vegetables.
