The etiquette for eating an artichoke involves using your fingers to pluck off each leaf and dipping it into a sauce, such as melted butter or aioli. Once you have removed the edible portion on the bottom of each leaf, discard the rest of the leaf. Once you reach the center (the heart), remove any remaining fuzzy parts and cut it into bite-sized pieces. It is also polite to use a knife and fork to eat the heart.
