What Is Risi Made From?
Risi is a thin, flat pasta that is made from durum wheat semolina and water. Sometimes egg yolk is added to the dough to give it a slightly richer flavor and a more golden color. The dough is rolled out very thinly, cut into squares or rectangles, and left to dry before being cooked. Risi is commonly used in Italian cuisine in dishes such as lasagna or baked ziti.
